satay veggies

I love this satay with broccoli. The veggies can easily be switched to whatever veggies are available. You’ll also want to increase or decrease the peanut butter, sweet chili, and soy sauce to your preference. Add 400g chicken if you like.

Ingredients
  1. 1 Tbs oil
  2. 1 brown onion chopped
  3. 270ml can coconut cream
  4. 200g (3/4c) crunchy peanut butter
  5. 60ml (1/4c) sweet chili sauce
  6. 1 Tbs soy sauce
  7. 1/2 head broccoli
  8. 1/2 head cauliflower
  9. 1 zucchini
  10. 100g green beans
  11. 50g bean sprouts
  12. Cooked rice for the side
Instructions
  1. Heat oil in a pan. Cook the onions until soft. Meanwhile, chop and wash all the veggies.
  2. Add the veggies to the pan and add about half a cup of water. Cover the pan and steam the veggies until soft. Add more water if required.
  3. Add the coconut cream, peanut butter, sweet chili sauce and soy sauce and stir until combined.
  4. Cook, stirring occasionally, for 10 minutes or until mixture thickens. Season with salt and pepper.
  5. Serve with rice.
