This salmon is very quick to make and has such a fresh flavour. It’s absolutely delicious, and I normally don’t like seafood.

Roast Salmon with Coriander, Oranges, and Herbs

Ingredients
  1. 1 whole side (about 3 pounds) skin-on salmon fillet, pin bones removed
  2. 1 tablespoon coriander seeds
  3. 3/4 teaspoon coarse sea salt
  4. 2 large seedless navel oranges, peeled and diced
  5. 1/2 cup chopped mixed fresh herbs (any combination of flat-leaf parsley, chives, cilantro and mint)
Instructions
  1. Preheat the oven to 230˚C. Line a tray with parchment paper. Place salmon, skin-side down, on the prepared paper, folding thin tail section under if fillet is too long to fit on the baking sheet. Coarsely grind coriander seeds in a spice grinder, or place them on a cutting board and crush with a rolling pin. Sprinkle coriander and salt over salmon and scatter oranges on top.
  2. Roast until salmon is lightly pink in the centre, about 15 minutes. Sprinkle with herbs and serve.
