I love this salsa. It’s so fresh and perfect for summer. I actually normally don’t like mango, but I love it here. The mango and onion play perfectly together.

  1. 3 ripe mangoes, diced
  2. 1 medium red bell pepper, chopped
  3. 1/2 cup chopped red onion
  4. 1/4 cup packed fresh cilantro leaves, chopped
  5. 1 jalapeño, seeded and minced
  6. 1 large lime, juiced (about ¼ cup lime juice)
  7. Salt and white pepper to taste
  1. Mix all the ingredients in a bowl and serve with corn chips.
